Instructions
- Heat olive oil in a skillet and season the pork roast with salt and pepper.
- Sear the pork roast on all sides and transfer it to a crock pot.
- In a bowl, mix together brown sugar, onion, garlic powder, cumin, coriander, oregano, and smoked paprika, then rub it over the pork.
- Whisk together Coke, adobo sauce, apple cider vinegar, and liquid smoke, and pour it around the pork.
- Cover and cook on low for 8-10 hours or on high for 5-6 hours until the pork shreds easily.
- Juice the lime over the pork, stir, and season with salt to taste.
- Serve with desired taco toppings.
