Ingredients

The pork

  • 2.5-3.5 pounds pork roast
  • to taste kosher salt
  • to taste freshly ground black pepper

The seasoning mix

  • 2 tablespoons brown sugar
  • 2 tablespoons dry onion
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon oregano
  • 1 teaspoon smoked paprika

The cooking liquid

  • 1 cup Coke
  • 1 tablespoon adobo sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon liquid smoke
  • Juice of 1 lime

Taco toppings

  • to taste lime wedges
  • to taste crumbled queso fresco
  • to taste fresh pico de gallo
  • to taste sliced white onions
  • to taste chopped cilantro
  • to taste sliced avocado

Instructions

  1. Heat olive oil in a skillet and season the pork roast with salt and pepper.
  2. Sear the pork roast on all sides and transfer it to a crock pot.
  3. In a bowl, mix together brown sugar, onion, garlic powder, cumin, coriander, oregano, and smoked paprika, then rub it over the pork.
  4. Whisk together Coke, adobo sauce, apple cider vinegar, and liquid smoke, and pour it around the pork.
  5. Cover and cook on low for 8-10 hours or on high for 5-6 hours until the pork shreds easily.
  6. Juice the lime over the pork, stir, and season with salt to taste.
  7. Serve with desired taco toppings.
