Ingredients

  • 2.5 lbs pork loin roast, all fat trimmed
  • to taste salt and pepper
  • to taste garlic powder
  • 6 oz Coke zero
  • ¼ cup brown sugar, unpacked
  • ¼ cup water
  • 8 oz Coke zero
  • 6 oz can sliced green chilies
  • 8 oz tomato sauce
  • 1 piece chipotle chile in adobo sauce
  • tsp garlic powder
  • tsp cumin
  • tsp chipotle chili powder, to taste
  • to taste salt and pepper
  • cup brown sugar, unpacked

Instructions

  1. Season the pork with salt, pepper, and garlic powder, then place it in the crock pot.
  2. Add 6 oz of coke and ¼ cup of brown sugar, and marinate in the refrigerator for a few hours or overnight, turning the meat at least once.
  3. Remove the crock from the refrigerator, add water, and cook on high for about 3-4 hours until the pork shreds easily.
  4. Remove the pork from the crock pot and discard any remaining liquid.
  5. Shred the pork using two forks.
  6. In the crock pot, combine 8 oz of coke, green chilies, tomato sauce, chipotle chile, garlic powder, cumin, chipotle chili powder, and the remaining brown sugar.
  7. Return the shredded pork to the crock pot and mix with the sauce, adjusting salt and pepper to taste.
  8. Cover and cook on high for an additional 1½ hours.
