Slow Cooker Sweet Pork with Tomatillos and Chipotles

Instructions
- 1. Season the pork roast with salt and pepper on all sides.
- 2. Heat olive oil in a skillet over medium heat and brown the roast on each side.
- 3. Transfer the roast to the slow cooker.
- 4. In the same skillet, cook the onions until soft, then add garlic and cook briefly.
- 5. Stir in brown sugar, chipotle chiles, salt, and pepper, then scrape into the slow cooker.
- 6. Add tomatillos around the pork and pour in the chicken broth.
- 7. Cover and cook on low for 8-10 hours.
- 8. Shred the pork and mix with the cooking liquid and tomatillos before serving over rice.
