Slow Cooker Sweet Pork with Tomatillos and Chipotles

Ingredients

The pork

  • 3 to 5 pounds pork sirloin roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, finely minced
  • cup light or dark brown sugar
  • 2 tablespoons canned chipotle chiles
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2-3 pounds tomatillos, husks removed, washed, and cut in half
  • 1 cup low-sodium chicken broth

For serving

  • as needed hot cooked rice

Instructions

  1. 1. Season the pork roast with salt and pepper on all sides.
  2. 2. Heat olive oil in a skillet over medium heat and brown the roast on each side.
  3. 3. Transfer the roast to the slow cooker.
  4. 4. In the same skillet, cook the onions until soft, then add garlic and cook briefly.
  5. 5. Stir in brown sugar, chipotle chiles, salt, and pepper, then scrape into the slow cooker.
  6. 6. Add tomatillos around the pork and pour in the chicken broth.
  7. 7. Cover and cook on low for 8-10 hours.
  8. 8. Shred the pork and mix with the cooking liquid and tomatillos before serving over rice.
