Ingredients

The pork

  • 3 lbs pork shoulder (Boston Butt Roast)

The seasoning mixture

  • ¾ cup packed light brown sugar
  • tsp chili powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ¼ tsp freshly ground black pepper

The broth

  • 2 cups low-sodium chicken broth
  • Tbsp tomato paste

Instructions

  1. Place the pork roast in a slow cooker.
  2. In a bowl, whisk together the brown sugar, chili powder, paprika, onion powder, garlic powder, salt, and pepper.
  3. Add the chicken broth and tomato paste to the seasoning mixture and whisk until blended.
  4. Pour the mixture over the pork roast in the slow cooker.
  5. Cover and cook on low heat for 7 to 8 hours.
  6. Remove the roast, discard excess fat, and shred the pork.
  7. Ladle out some fat from the broth and return the shredded pork to the slow cooker.
  8. Allow the pork to rest on warm heat for 1 to 3 hours before serving.
