Slow Cooker BBQ Pulled Pork

Instructions
- Add onion, barbecue sauce, and chipotle (if using) to the slow cooker and stir.
- Rub the pork shoulder with salt and spice rub.
- Place the pork shoulder in the slow cooker with the fat side up.
- Cook on Low for 9-10 hours or High for 5-6 hours, stirring halfway if possible.
- After cooking, discard the fat layer and shred the meat using two forks.
- Skim excess fat from the juices in the pot and return the meat to the crock, mixing with the juices.
- Add more barbecue sauce if needed and serve on toasted burger buns, topped with coleslaw.
