Slow Cooker BBQ Pulled Pork

Ingredients

The pork

  • 3-4 lbs Pork Shoulder (boneless or bone-in)
  • ½-1 tsp Kosher Salt
  • 1 Tbsp Ribs Spice Rub
  • 1 Small Yellow Onion, halved and sliced
  • 2 cups Barbecue Sauce

Optional ingredients

  • 1-2 Tbsp Chipotles in Adobo, with some of the sauce

Instructions

  1. Add onion, barbecue sauce, and chipotle (if using) to the slow cooker and stir.
  2. Rub the pork shoulder with salt and spice rub.
  3. Place the pork shoulder in the slow cooker with the fat side up.
  4. Cook on Low for 9-10 hours or High for 5-6 hours, stirring halfway if possible.
  5. After cooking, discard the fat layer and shred the meat using two forks.
  6. Skim excess fat from the juices in the pot and return the meat to the crock, mixing with the juices.
  7. Add more barbecue sauce if needed and serve on toasted burger buns, topped with coleslaw.
