Ingredients

The spice rub

  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon mustard powder
  • 1 teaspoon dried thyme
  • 2 tablespoons light brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

The pork and cooking ingredients

  • 3-4 lbs. boneless pork shoulder
  • 5-6 lbs. bone-in pork shoulder
  • ½ medium white onion, diced
  • 3 cloves garlic, smashed and diced
  • 1 tablespoon apple cider vinegar
  • ½ cup bbq sauce, plus more for serving
  • ¼ cup bourbon
  • 2 teaspoons Worcestershire sauce
  • 3 tablespoons olive oil

Instructions

  1. Mix the spice rub ingredients in a bowl.
  2. Rub the spice mixture evenly over the pork.
  3. Sear the pork in a hot skillet with olive oil for 2-4 minutes on each side.
  4. Combine the onion, garlic, apple cider vinegar, BBQ sauce, bourbon, and Worcestershire sauce in a bowl.
  5. Place the seared pork in the slow cooker and pour the sauce mixture over it.
  6. Cook on low for 6-8 hours until the pork is tender and shreds easily.
  7. Remove the pork, shred it, and mix it with some of the leftover sauce.
  8. Serve the pulled pork as desired.
