Slow Cooker Pulled Pork

Instructions
- Heat olive oil in a Dutch oven or large stock pot over medium-high heat until shimmering.
- Season the pork generously with salt and sear it in the pot until a dark brown crust forms on one side, about 5 to 6 minutes.
- Flip the pork and brown the other side for another 4 to 5 minutes.
- Transfer the pork to a slow cooker and pour applesauce over the top.
- Cover and cook on HIGH for 4 to 6 hours or LOW for 8 to 10 hours.
- Once cooked, shred the pork using two forks.
- If using, pour barbecue sauce over the shredded pork and cook for an additional 30 minutes until heated through.
- Season with salt and pepper to taste and serve in buns if desired.
