Smoky Slow Cooker Pork Tacos

Ingredients

The pork

  • 6-8 pounds bone-in pork shoulder
  • 1 pint jar Smoky Roasted Salsa or smoky-flavored store-bought salsa
  • 6 cloves garlic, peeled and smashed
  • 3-4 canned chipotles in adobo sauce, chopped

The toppings

  • 6 inches corn or flour tortillas
  • to taste Mexican coleslaw
  • to taste guacamole
  • to taste Cotija cheese
  • to taste cilantro leaves, chopped

Instructions

  1. Place the pork shoulder in a slow cooker and top with a mixture of garlic, salsa, and chipotles.
  2. Cover and cook on low for 12-14 hours until the pork is tender.
  3. Once cooked, shred the pork and transfer it to a baking dish, then bake at 375°F for 20 minutes.
  4. While the pork bakes, strain the cooking juices and reduce them in a saucepan until thickened.
  5. Toss the shredded pork with the reduced juices.
  6. Warm the tortillas and assemble the tacos with pulled pork, coleslaw, guacamole, Cotija cheese, and cilantro.
