Ingredients

The pork

  • 2 pounds pork shoulder or Boston butt roast
  • ½ unit onion (roughly chopped)
  • ¼ unit pineapple (peeled and roughly chopped)
  • 2 unit limes (juiced)
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic (crushed)
  • 1 unit jalapeno (seeded and roughly chopped)
  • 2 teaspoons oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper

For serving

  • as needed unit tortillas
  • as needed unit diced pineapple
  • as needed unit tomatillo salsa
  • as needed unit sour cream
  • as needed unit cilantro

Instructions

  1. Place the pork shoulder in the bottom of the slow cooker.
  2. Blend all other ingredients until smooth and pour over the pork.
  3. Cover and cook on high for 4 hours or low for 6 to 8 hours until the meat is tender.
  4. Shred the meat with a fork, drain excess liquid, and serve with accompaniments.
