Instructions
- Prepare the slow cooker by coating it with cooking spray and placing the pork inside.
- Season the pork with salt and pepper, add garlic and ginger, then pour hoisin sauce over the top.
- Cover and cook on HIGH for 3 to 4 hours or LOW for 5 to 7 hours until cooked through.
- Remove the pork, shred it, and return it to the slow cooker to keep warm.
- In a mixing bowl, combine the broccoli slaw, peanuts, green onions, and cilantro.
- Whisk together olive oil, rice vinegar, honey, and soy sauce, then pour over the slaw and toss to combine.
- Warm the tortillas and fill them with shredded pork and broccoli slaw before serving.
