Vegan Strawberry Crumble Bars

The crust/crumble

The filling

roughly chopped strawberries

brown sugar

lemon juice

zest

corn starch or arrowroot
Garnish

fresh mint

fresh strawberries
Instructions
- Preheat the oven to 350°F and line a 9x9 inch baking dish with parchment paper.
- In a large mixing bowl, combine all crust ingredients and mix until well combined.
- Set aside ⅓ of the mixture for topping.
- Press ⅔ of the mixture into the bottom of the prepared baking dish.
- In another bowl, mix all filling ingredients until well combined.
- Pour the filling over the crust and spread evenly.
- Crumble the reserved crust mixture over the filling.
- Bake for 40 minutes or until golden and slightly bubbling.
- Let cool completely before cutting into bars.
