Vegan Strawberry Crumble Bars

Ingredients

The crust/crumble

  • cups old fashioned or quick oats
  • cups almond flour
  • ½ cup brown sugar
  • 2 tbsp brown sugar
  • 1 pinch sea salt
  • ¼ cup vegan butter
  • 1 tsp vanilla

The filling

  • 2 cups roughly chopped strawberries
  • 1 tbsp brown sugar
  • 1-2 tbsp lemon juice
  • ½ lemon zest
  • tbsp corn starch or arrowroot

Garnish

  • to taste fresh mint
  • to taste fresh strawberries

Instructions

  1. Preheat the oven to 350°F and line a 9x9 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine all crust ingredients and mix until well combined.
  3. Set aside ⅓ of the mixture for topping.
  4. Press ⅔ of the mixture into the bottom of the prepared baking dish.
  5. In another bowl, mix all filling ingredients until well combined.
  6. Pour the filling over the crust and spread evenly.
  7. Crumble the reserved crust mixture over the filling.
  8. Bake for 40 minutes or until golden and slightly bubbling.
  9. Let cool completely before cutting into bars.
