Strawberry Crumble Bars

The strawberry filling

fresh strawberries, sliced

balsamic vinegar

Instructions
- Soften the coconut butter by placing the jar in a bowl of hot water.
- In a saucepan over medium-low heat, combine strawberries, water, and coconut sugar (if using) and let them break down.
- In a large mixing bowl, combine all crust/crumble ingredients except for coconut butter and oil, and mix with a fork.
- Add the softened coconut butter and solid coconut oil to the mixture and mix until crumbles form without overmixing.
- Preheat the oven to 350°F and line a square pan with parchment paper.
- Press about 2/3 of the crumble mixture into the bottom of the pan to form the crust.
- Once the strawberries are saucy, stir in the balsamic vinegar and pour the mixture over the crust.
- Sprinkle the remaining crumble mixture on top and bake for about 30 minutes.
- Let cool completely, then slice and serve. Optionally, serve with coconut cream or vanilla ice cream.
