Ingredients

The crust/crumble

  • 2 cups Bob’s Red Mill almond flour
  • ¼ cup Bob’s Red Mill tapioca flour
  • ¼ cup Bob’s Red Mill coconut sugar
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup coconut butter, softened
  • ¼ cup coconut oil, solid

The strawberry filling

  • 16 oz fresh strawberries, sliced
  • ¼ cup water
  • 1 tbsp balsamic vinegar
  • 1 tbsp Bob’s Red Mill coconut sugar (optional)

Instructions

  1. Soften the coconut butter by placing the jar in a bowl of hot water.
  2. In a saucepan over medium-low heat, combine strawberries, water, and coconut sugar (if using) and let them break down.
  3. In a large mixing bowl, combine all crust/crumble ingredients except for coconut butter and oil, and mix with a fork.
  4. Add the softened coconut butter and solid coconut oil to the mixture and mix until crumbles form without overmixing.
  5. Preheat the oven to 350°F and line a square pan with parchment paper.
  6. Press about 2/3 of the crumble mixture into the bottom of the pan to form the crust.
  7. Once the strawberries are saucy, stir in the balsamic vinegar and pour the mixture over the crust.
  8. Sprinkle the remaining crumble mixture on top and bake for about 30 minutes.
  9. Let cool completely, then slice and serve. Optionally, serve with coconut cream or vanilla ice cream.
