Cranberry Orange Crumble Bars

Ingredients

The crust/crumble

  • 2 cups almond flour
  • ¼ cup tapioca flour
  • ¼ cup coconut sugar (or maple sugar)
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup coconut butter, softened
  • ¼ cup coconut oil, solid

The cranberry orange filling

  • 12 oz fresh cranberries
  • 1 cup water
  • ¼ cup maple syrup
  • 1 orange juice and zest

Instructions

  1. Soften the coconut butter in a bowl of hot water.
  2. Prepare the cranberry filling by combining cranberries, water, maple syrup, orange juice, and zest in a saucepan over medium-low heat and cover.
  3. In a large mixing bowl, combine the crust/crumble ingredients except for the coconut butter and oil, and mix with a fork.
  4. Add the softened coconut butter and solid coconut oil to the mixture and mix until crumbly.
  5. Preheat the oven to 350°F and line a square pan with parchment paper.
  6. Press about ⅔ of the crumble mixture into the bottom of the pan to form the crust.
  7. Once the cranberries have broken down, layer the cranberry mixture over the crust.
  8. Sprinkle the remaining crumble mixture on top and bake for about 30 minutes.
  9. Allow to cool completely, optionally refrigerate for 30 minutes before slicing and serving.
