Cranberry Bars with Crumble Topping

Ingredients

The crust and topping

  • 1 ¼ cups oat flour
  • ¾ cup old-fashioned rolled oats
  • ¾ cup coconut sugar
  • ½ teaspoon salt
  • 6 tablespoons melted coconut oil
  • 1 tablespoon water

The filling

  • ¾ cup leftover cranberry sauce

Instructions

  1. Preheat the oven to 350ºF and line an 8-inch square baking dish with parchment paper.
  2. In a large bowl, mix the oat flour, oats, sugar, and salt.
  3. Add the melted coconut oil and water, stirring until the mixture is crumbly and holds together.
  4. Reserve ½ cup of the mixture for the topping.
  5. Press the remaining mixture into the bottom of the prepared pan and bake for 10 minutes.
  6. Spread the cranberry sauce over the baked crust, then sprinkle the reserved crumble on top and press lightly.
  7. Bake until the topping is lightly golden, about 30 minutes.
  8. Let the bars cool completely for about 4 hours before slicing into 16 pieces.
