Cranberry-Oatmeal Bars

Ingredients

Crust

  • 1 cup all-purpose flour
  • 1 cup quick-cooking oats
  • ½ cup packed brown sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp ground cinnamon
  • 6 Tbsp butter, melted
  • 3 Tbsp orange juice
  • as needed spray cooking spray

Filling

  • 1⅓ cups dried cranberries
  • ¾ cup light sour cream
  • ½ cup granulated sugar
  • 2 Tbsp all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp grated orange rind
  • 1 large egg white, lightly beaten

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine flour, oats, brown sugar, salt, baking soda, and cinnamon.
  3. Add melted butter and orange juice to the dry ingredients, mixing until crumbly.
  4. Press most of the oat mixture into the bottom of an 11 x 7-inch baking dish coated with cooking spray.
  5. In another bowl, mix cranberries, sour cream, granulated sugar, flour, vanilla extract, orange rind, and egg white.
  6. Spread the cranberry mixture over the crust and sprinkle the reserved oat mixture on top.
  7. Bake for 40 minutes or until the edges are golden.
  8. Cool completely in the pan on a wire rack before serving.
