Cranberry Bars

Instructions
- Preheat the oven to 350°F and prepare an 8x8-inch baking dish with nonstick spray and parchment paper.
- In a saucepan, combine cranberries, maple syrup, lemon juice, and salt. Simmer over medium-low heat, smashing the berries until mostly broken down.
- Stir in cornstarch and cook until thickened, about 1-2 minutes. Transfer to a bowl to cool.
- In a mixing bowl, combine flour, oats, sugar, baking powder, and salt. Add melted butter and mix until crumbly.
- Press two-thirds of the mixture into the bottom of the prepared baking dish.
- Spread the cranberry filling evenly over the crust.
- Sprinkle the remaining crumble mixture on top and bake for 20-25 minutes until golden and firm.
- Cool for 30 minutes, then transfer to a wire rack to cool completely before slicing.
