Ingredients

The crust and crumble topping

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup cold unsalted butter, cubed
  • 1 large egg
  • ¼ cup milk
  • 2 teaspoons pure vanilla extract
  • cup sliced almonds (optional)

The cranberry filling

  • 4 cups fresh or frozen cranberries
  • ¾ cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons orange zest
  • 1 tablespoon fresh orange juice

The optional orange icing

  • 2 tablespoons fresh orange juice
  • 1 cup confectioners' sugar

Instructions

  1. Preheat the oven to 350°F (177°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Cut the cold butter into the dry mixture until it resembles pea-sized crumbles.
  4. In a separate bowl, whisk together the egg, milk, and vanilla, then pour over the flour mixture and mix until crumbly.
  5. Set aside 2 cups of the mixture and press the rest into the prepared pan to form the crust.
  6. In another bowl, mix the cranberry filling ingredients and spread over the crust.
  7. Sprinkle the reserved crumble mixture and sliced almonds over the cranberry filling.
  8. Bake for 40-50 minutes until the top is lightly browned and a toothpick comes out mostly clean.
  9. Allow to cool completely in the pan, then make the icing by whisking the icing ingredients together and drizzle over the bars before cutting into squares.
