Ingredients

The crust

  • 5 tablespoons cold butter, cubed
  • ¾ cup flour
  • ¼ cup old-fashioned rolled oats
  • 2 tablespoons ground flax seed
  • 3 tablespoons maple syrup

The filling

  • 1 ½ cups fresh or frozen cranberries, roughly chopped
  • 1 cup chopped pecans
  • ¼ cup granulated sugar
  • 3 tablespoons maple syrup
  • 3 tablespoons melted butter
  • 1 tablespoon corn starch
  • ¼ teaspoon coarse salt

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper.
  2. Combine the crust ingredients in a food processor and pulse until crumbly.
  3. Press the dough into the baking dish and bake for 20 minutes until lightly browned.
  4. Let the crust cool slightly, then mix the filling ingredients in a bowl.
  5. If the filling is dry, add a tablespoon of water and mix until combined.
  6. Pour the filling over the crust and bake for an additional 15-20 minutes until set.
  7. Allow the bars to cool, then refrigerate until completely cooled before slicing.
