Pumpkin Oatmeal Bars with Cranberries

Instructions
- Preheat the oven to 375°F and grease an 8x8 inch baking dish.
- In a large mixing bowl, combine the pumpkin puree, eggs, coconut milk, and pure maple syrup.
- In a small bowl, stir together the oats, cinnamon, and salt, then add this mixture to the wet ingredients and stir to combine.
- Fold in the chopped cranberries and transfer the mixture to the prepared baking dish.
- Bake for 30 minutes, or until set and no longer jiggly in the middle.
- Allow to cool on a rack before cutting into 12 bars.
- Serve within 2 days or freeze for later.
