Ingredients

  • 1 cup pumpkin puree
  • 2 units eggs
  • ½ cup coconut milk or other milk
  • ½ cup pure maple syrup
  • 2 cups old fashioned oats
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup chopped cranberries

Instructions

  1. Preheat the oven to 375°F and grease an 8x8 inch baking dish.
  2. In a large mixing bowl, combine the pumpkin puree, eggs, coconut milk, and pure maple syrup.
  3. In a small bowl, stir together the oats, cinnamon, and salt, then add this mixture to the wet ingredients and stir to combine.
  4. Fold in the chopped cranberries and transfer the mixture to the prepared baking dish.
  5. Bake for 30 minutes, or until set and no longer jiggly in the middle.
  6. Allow to cool on a rack before cutting into 12 bars.
  7. Serve within 2 days or freeze for later.
