Ingredients

The base

  • 3 cups old-fashioned whole rolled oats or quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

The wet ingredients

  • 1 cup fresh or canned pumpkin puree
  • cup unsweetened applesauce
  • cup coconut oil, melted
  • cup pure maple syrup
  • ¼ cup coconut sugar or brown sugar
  • 1 teaspoon pure vanilla extract

The mix-ins

  • ¾ cup semi-sweet chocolate chips
  • a few additional chocolate chips for topping

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a baking pan with parchment paper.
  2. Pulse the oats in a food processor until slightly broken up, then combine with the other ingredients in a large bowl.
  3. Mix until thoroughly combined, ensuring the mixture is thick and heavy.
  4. Spread the mixture into the prepared pan, pressing it down firmly and evenly.
  5. Bake for 25-28 minutes until the edges are lightly browned and the center is set.
  6. Cool the bars in the pan at room temperature for 30-60 minutes, then refrigerate for 1-2 hours.
  7. Remove from the pan and cut into squares.
