Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • ½ cup white whole wheat flour
  • cup coconut sugar or light brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoons pumpkin pie spice
  • pinch salt
  • cup chocolate chunks

Wet Ingredients

  • 1 large egg
  • ½ cup creamy cashew butter
  • ½ cup unsweetened pumpkin puree
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and spray an 8-inch x 8-inch baking dish with nonstick cooking spray.
  2. Mix all dry ingredients in a medium bowl and set aside.
  3. In a large bowl, whisk together all wet ingredients until combined.
  4. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  5. Transfer the batter into the baking dish and spread it out with a spatula.
  6. Top with additional chocolate chunks if desired.
  7. Bake for 18-22 minutes.
  8. Let cool for 10 minutes, then top with sea salt, slice, and serve.
