Ingredients

  • 1 cup white whole wheat flour
  • 1 cup quick cooking oats
  • 2 tsp pumpkin spice
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup pumpkin puree
  • ½ cup coconut oil (melted)
  • ½ cup coconut sugar
  • 2 large eggs (whisked)
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and grease an 8×8 inch baking pan.
  2. 2. In a medium bowl, mix together the flour, oats, pumpkin spice, baking soda, and salt.
  3. 3. In a large bowl, combine the pumpkin, melted coconut oil, coconut sugar, eggs, and vanilla extract.
  4. 4. Add the dry ingredients to the wet ingredients and stir well. Then fold in the chocolate chips.
  5. 5. Pour the batter into the prepared pan and spread it evenly with a rubber spatula.
  6. 6. Bake for 16-18 minutes. Allow to cool completely before cutting into squares.
