Ingredients

The base

  • 2 ¼ cups old fashioned rolled oats or quick oats

  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon kosher salt

The wet ingredients

  • ¾ cup pumpkin purée
  • 1 cup milk of choice
  • 1 large egg
  • ¼ cup pure maple syrup
  • 2 tablespoons creamy peanut butter

Mix-ins

  • ½ cup desired mix-ins (e.g., chopped nuts, dried cranberries, chocolate chips, diced apricots, coconut)

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking pan.
  2. In a large bowl, mix the dry ingredients together.
  3. In a separate bowl, whisk the wet ingredients until smooth.
  4. Combine the wet and dry ingredients, then fold in any desired mix-ins.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake until golden and a knife inserted in the center comes out clean, about 20 to 25 minutes.
  7. Let the bars cool in the pan, then slice and enjoy.
