Ingredients

The bars

  • ½ cup pumpkin puree
  • ½ cup almond butter
  • cup honey
  • 2 pieces eggs
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon sea salt
  • ½ teaspoon baking soda
  • 1 teaspoon apple cider vinegar

Maple Pecan Glaze

  • ¾ cup pecans
  • ¼ cup maple syrup
  • 2 tablespoons melted coconut oil
  • ¼ cup water (or coffee)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, mix pumpkin puree, almond butter, honey, eggs, pumpkin pie spice, sea salt, and baking soda until smooth.
  3. Add apple cider vinegar and stir until the batter is uniform.
  4. Pour the batter into a greased 8-inch baking dish lined with parchment paper.
  5. Bake for about 35 minutes, until the center rises and does not jiggle.
  6. Let the bars cool completely, then slice into squares.
  7. For the glaze, blend pecans, maple syrup, melted coconut oil, water (or coffee), vanilla, and salt until smooth.
  8. Drizzle the glaze over the bars and serve with chopped pecans on top.
