Instructions
- Preheat the oven to 350ºF.
- In a large bowl, mix pumpkin puree, almond butter, honey, eggs, pumpkin pie spice, sea salt, and baking soda until smooth.
- Add apple cider vinegar and stir until the batter is uniform.
- Pour the batter into a greased 8-inch baking dish lined with parchment paper.
- Bake for about 35 minutes, until the center rises and does not jiggle.
- Let the bars cool completely, then slice into squares.
- For the glaze, blend pecans, maple syrup, melted coconut oil, water (or coffee), vanilla, and salt until smooth.
- Drizzle the glaze over the bars and serve with chopped pecans on top.
