Pumpkin Oatmeal Cookie Bars

Ingredients

  • 2 cups Rolled oats
  • 1 cup White whole wheat flour
  • ¾ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Pumpkin pie spice
  • ½ teaspoon Salt
  • 1 cup Chocolate chunks
  • 2 large Eggs
  • ½ cup Creamy cashew butter
  • 1 cup Unsweetened pumpkin puree
  • ¼ cup Maple syrup
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat the oven and prepare an 8x8 baking pan.
  2. In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, whisk together the eggs, cashew butter, pumpkin puree, maple syrup, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fold in the chocolate chunks.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake in the preheated oven until set and golden.
  8. Let the bars cool in the pan for 10-15 minutes before removing.
