Ingredients

The base

  • cups gluten free regular oats
  • cups 1:1 gluten free baking flour
  • teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

The wet ingredients

  • 1 cup pumpkin puree
  • cup maple syrup
  • 2 teaspoons vanilla extract
  • cup unsweetened applesauce

The mix-ins

  • ½ cup chocolate chunks

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare a 9" x 9" baking dish with cooking spray and parchment paper.
  3. In a medium bowl, combine oats, baking flour, baking powder, baking soda, salt, and pumpkin pie spice.
  4. In a large bowl, whisk together pumpkin puree, maple syrup, vanilla extract, and applesauce until combined.
  5. Gradually add the dry ingredients to the wet ingredients and fold in the chocolate chunks.
  6. Transfer the mixture to the prepared baking dish.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
