Ingredients

The base

  • cups rolled oats
  • 1 cup puffed brown rice cereal
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • ¾ cup peanut butter
  • cup pumpkin puree
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

The topping

  • cups dark chocolate chips
  • 1 tablespoon coconut oil
  • to taste none sprinkles

Instructions

  1. Mix the dry ingredients in a large bowl.
  2. In a separate bowl, whisk together the wet ingredients until smooth.
  3. Combine the wet and dry ingredients and mix well.
  4. Transfer the mixture to a lined baking pan and press down evenly.
  5. Melt the chocolate and coconut oil together in a microwave-safe bowl.
  6. Spread the melted chocolate over the pressed mixture and add sprinkles if desired.
  7. Refrigerate for 2-3 hours until set, then slice and serve.
