No Bake Pumpkin Bars

Ingredients

The bars

  • 1 cup creamy cashew butter
  • ½ cup pumpkin puree
  • cup pure maple syrup
  • 1 ¼ cups old-fashioned oats, ground into fine flour
  • ¼ cup ground flaxseed
  • 1 tbsp pumpkin pie spice
  • ½ tsp fine sea salt

The topping

  • ¾ cup semi sweet chocolate chips
  • 2 tbsp cashew butter

Instructions

  1. Line an 8×8 inch baking dish with parchment paper.
  2. Combine all bar ingredients in a mixing bowl and mix until smooth.
  3. Press the mixture evenly into the lined pan.
  4. For the topping, place chocolate chips and nut butter in a microwave-safe bowl and microwave in 30 second increments until smooth.
  5. Pour the chocolate on top of the bar mixture and smooth it out.
  6. Top with flaky salt.
  7. Freeze for four hours or overnight.
  8. Once solid, slice into 16 bars and store in a freezer bag or airtight container.
