Pumpkin Cheesecake Oatmeal Cookie Bars

Instructions
- Preheat the oven to 350℉ and prepare a 9x13 inch baking pan with foil and cooking spray.
- In a large bowl, mix together the flour, oats, brown sugar, pecans, salt, pie spice, and baking soda.
- Add the butter and mix until crumbly, reserving 1 ½ cups of the mixture for topping.
- Press the remaining mixture into the bottom of the pan and bake for about 15 minutes.
- In the same bowl, beat the cream cheese, granulated sugar, cream or milk, and remaining flour until creamy.
- Add the eggs one at a time, mixing well after each addition, then pour the mixture onto the crust.
- Dollop the pumpkin butter on top and swirl it into the cream cheese mixture.
- Sprinkle the reserved oat mixture on top and bake for 30-35 minutes until golden brown.
- Let cool completely before cutting into bars.
