Ingredients

The crust and topping

  • 2 cups all-purpose flour
  • 1 tablespoon all-purpose flour
  • 2 cups old-fashioned oats
  • 1 cup light brown sugar
  • ¾ cup pecans
  • 1 teaspoon kosher salt
  • 1 teaspoon pumpkin pie spice
  • ¾ teaspoon baking soda
  • 1 ¼ cups unsalted butter

The filling

  • 2 packages cream cheese
  • cup granulated sugar
  • 2 tablespoons cream or milk
  • 2 large eggs
  • 1 jar pumpkin butter

Instructions

  1. Preheat the oven to 350℉ and prepare a 9x13 inch baking pan with foil and cooking spray.
  2. In a large bowl, mix together the flour, oats, brown sugar, pecans, salt, pie spice, and baking soda.
  3. Add the butter and mix until crumbly, reserving 1 ½ cups of the mixture for topping.
  4. Press the remaining mixture into the bottom of the pan and bake for about 15 minutes.
  5. In the same bowl, beat the cream cheese, granulated sugar, cream or milk, and remaining flour until creamy.
  6. Add the eggs one at a time, mixing well after each addition, then pour the mixture onto the crust.
  7. Dollop the pumpkin butter on top and swirl it into the cream cheese mixture.
  8. Sprinkle the reserved oat mixture on top and bake for 30-35 minutes until golden brown.
  9. Let cool completely before cutting into bars.
