Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 cups old-fashioned oats

Wet Ingredients

  • 1 cup unsalted butter
  • cup pumpkin puree
  • ¾ cup light brown sugar
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs

Optional Ingredients

  • ½ cup chopped pecans

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. In another bowl, whisk together the wet ingredients.
  3. Add the dry ingredients to the wet ingredients and mix until combined.
  4. Stir in the oats and pecans if using.
  5. Chill the dough for 1 hour.
  6. Preheat the oven to 350°F and line baking sheets with parchment paper.
  7. Drop dough onto the sheets and flatten slightly.
  8. Bake for 10 to 13 minutes, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
