Ingredients

The cookie dough

  • 1 cup oat flour
  • ¼ cup rolled oats
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ tsp sea salt
  • ¼ cup melted coconut oil
  • ½ cup pumpkin puree
  • 1 large egg white
  • 1 tsp vanilla extract
  • ½ cup coconut sugar

Add-ins

  • cup unsweetened shredded coconut
  • cup chocolate chips
  • cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oat flour, rolled oats, cinnamon, pumpkin pie spice, baking soda, and salt.
  3. In a medium bowl, stir together melted coconut oil, pumpkin puree, egg white, vanilla extract, and coconut sugar.
  4. Combine the wet ingredients with the dry ingredients and mix until well incorporated.
  5. Fold in the shredded coconut, chocolate chips, and chopped pecans.
  6. Scoop heaping tablespoons of dough onto the prepared baking sheet, shaping them into cookies.
  7. Bake for 15 minutes or until lightly browned and set through.
  8. Allow to cool before enjoying.
