Ingredients

Wet Ingredients

  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 1 cup pure pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 ½ cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup dried cranberries

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. In a bowl, whisk together the dry ingredients and set aside.
  3. In a mixer, beat the butter and sugars until fluffy, then add pumpkin, egg, and vanilla.
  4. Gradually mix in the dry ingredients until combined.
  5. Stir in oats, chocolate chips, and cranberries.
  6. Drop rounded tablespoons of dough onto the baking sheet.
  7. Bake for about 12 minutes until lightly browned, then cool on racks.
