Ingredients

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 Tbsp butter (room temperature)
  • ½ cup pumpkin purée
  • cup brown sugar
  • cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • cups rolled oats
  • cup dried cranberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, beat together the butter, pumpkin, brown sugar, and white sugar until well combined.
  4. Add the egg and vanilla to the mixture and beat until combined.
  5. Mix the flour mixture into the pumpkin mixture until a thick batter forms.
  6. Stir in the rolled oats and dried cranberries until evenly incorporated.
  7. Line a baking sheet with parchment paper and spoon the batter onto the sheet in 2 Tbsp portions, flattening them slightly.
  8. Bake for 16-18 minutes or until slightly browned on the surface.
  9. Allow the cookies to cool on a wire rack before serving.
