Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, beat together the butter, pumpkin, brown sugar, and white sugar until well combined.
- Add the egg and vanilla to the mixture and beat until combined.
- Mix the flour mixture into the pumpkin mixture until a thick batter forms.
- Stir in the rolled oats and dried cranberries until evenly incorporated.
- Line a baking sheet with parchment paper and spoon the batter onto the sheet in 2 Tbsp portions, flattening them slightly.
- Bake for 16-18 minutes or until slightly browned on the surface.
- Allow the cookies to cool on a wire rack before serving.
