Instructions
- Preheat the oven to 350°F and prepare a cookie sheet with parchment paper.
- Combine ground flaxseed and water in a small bowl and set aside.
- In a medium bowl, mix pumpkin puree, molasses, coconut sugar, and vanilla, then add the flax mixture.
- In a large bowl, combine almond flour, oat flour, oats, salt, baking soda, pumpkin pie spice, and cinnamon.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Drop spoonfuls of dough onto the prepared cookie sheet to form 12 cookies, flattening them slightly.
- Bake for 20 minutes and let cool on a rack.
- Melt chocolate chips and coconut oil together, then drizzle over the cooled cookies.
