Ingredients

The cookies

  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1 cup pumpkin puree
  • 2 tbsp blackstrap molasses
  • ½ cup coconut sugar
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 cup oat flour
  • ½ cup old-fashioned oats
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon

The glaze

  • ¼ cup chocolate chips
  • 2 tsp coconut oil

Instructions

  1. Preheat the oven to 350°F and prepare a cookie sheet with parchment paper.
  2. Combine ground flaxseed and water in a small bowl and set aside.
  3. In a medium bowl, mix pumpkin puree, molasses, coconut sugar, and vanilla, then add the flax mixture.
  4. In a large bowl, combine almond flour, oat flour, oats, salt, baking soda, pumpkin pie spice, and cinnamon.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Drop spoonfuls of dough onto the prepared cookie sheet to form 12 cookies, flattening them slightly.
  7. Bake for 20 minutes and let cool on a rack.
  8. Melt chocolate chips and coconut oil together, then drizzle over the cooled cookies.
