Ingredients

  • 2 cups flour
  • 1 cup old-fashioned rolled oats

  • ½ teaspoon kosher or sea salt
  • ¾ cup dark brown sugar
  • ¼ cup butter, softened
  • cups pumpkin puree
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup raisins

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat together brown sugar and butter until fluffy, then mix in the eggs, pumpkin puree, and vanilla until combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined, then fold in the raisins.
  5. Use a medium cookie scoop to form cookie balls and place them on the baking sheet, spacing them about 1-2 inches apart.
  6. Bake for 8-11 minutes or until the edges start to brown.
