Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together oat flour, rolled oats, cinnamon, pumpkin pie spice, baking soda, and salt.
- In a separate medium bowl, mix melted coconut oil, pumpkin puree, egg white, vanilla extract, and coconut sugar.
- Combine the wet ingredients with the dry ingredients and mix until well incorporated.
- Fold in the shredded coconut, chocolate chips, and chopped pecans.
- Scoop a heaping tablespoon of dough and shape it into a cookie, placing it on the prepared baking sheet. Repeat until all dough is used, making about 12 cookies.
- Bake for 15 minutes or until fragrant and lightly browned. Allow to cool before enjoying.
