Ingredients

  • ½ cup pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup whole wheat flour or all-purpose flour

  • ¼ cup granulated sugar
  • ¼ cup packed dark brown sugar
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • teaspoon ground cloves
  • ½ cup semi-sweet chocolate chips
  • ½ cup dried cranberries

Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the pumpkin, egg, and vanilla until combined.
  3. In another bowl, mix the flour, oats, sugars, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves, chocolate chips, and cranberries.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Spoon the dough onto the baking sheet and flatten slightly.
  6. Bake for 13-15 minutes until lightly browned.
  7. Let cool on the baking sheet for 3 minutes before transferring to a wire rack.
