Ingredients

The base

  • 2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • cups old-fashioned whole rolled oats
  • 1 cup unsalted butter, melted
  • ¼ cup unsulphured or dark molasses
  • ¾ cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 1 egg yolk egg yolk
  • ¾ cup pumpkin puree
  • 1 teaspoon pure vanilla extract

The add-ins

  • cups total add-ins (chocolate chips, dried cranberries, pepitas, chopped pecans, or a combination)

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare baking sheets with parchment paper.
  2. In a large bowl, mix the flour, baking soda, cinnamon, pumpkin pie spice, and salt, then fold in the oats.
  3. Melt the butter and whisk in the molasses, brown sugar, and granulated sugar until combined, then add the egg yolk, pumpkin, and vanilla.
  4. Combine the wet and dry ingredients until just mixed, then fold in the add-ins.
  5. Scoop dough onto the baking sheets, slightly flattening each ball.
  6. Bake for 13-15 minutes until lightly browned on the edges and soft in the center.
  7. Let the cookies cool completely on the baking sheets.
