Instructions
- Preheat the oven to 350°F (177°C) and prepare baking sheets with parchment paper.
- In a large bowl, mix the flour, baking soda, cinnamon, pumpkin pie spice, and salt, then fold in the oats.
- Melt the butter and whisk in the molasses, brown sugar, and granulated sugar until combined, then add the egg yolk, pumpkin, and vanilla.
- Combine the wet and dry ingredients until just mixed, then fold in the add-ins.
- Scoop dough onto the baking sheets, slightly flattening each ball.
- Bake for 13-15 minutes until lightly browned on the edges and soft in the center.
- Let the cookies cool completely on the baking sheets.
