Instructions
- Preheat the oven to 350°F and prepare two baking sheets with parchment paper or a silpat.
- In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
- In a large bowl, cream together the butter and sugars using a mixer on medium speed.
- Add the egg, then mix in the pumpkin and vanilla extract.
- Gradually stir in the flour mixture and oats until just combined, then fold in the pecans.
- Drop tablespoon-sized portions of dough onto the prepared baking sheets.
- Bake for 10-12 minutes until the edges are light brown.
- Let the cookies cool on the baking sheet for 3-4 minutes before transferring to a wire rack to cool completely.
