Ingredients

  • 1 cup all purpose flour
  • 2 cups quick oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 2 tbsp unsalted butter
  • ½ cup sugar
  • ½ cup unpacked brown sugar
  • 1 large egg
  • 6 tbsp canned pumpkin
  • 2 tsp vanilla extract
  • ¾ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare two baking sheets with parchment paper or a silpat.
  2. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  3. In a large bowl, cream together the butter and sugars using a mixer on medium speed.
  4. Add the egg, then mix in the pumpkin and vanilla extract.
  5. Gradually stir in the flour mixture and oats until just combined, then fold in the pecans.
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheets.
  7. Bake for 10-12 minutes until the edges are light brown.
  8. Let the cookies cool on the baking sheet for 3-4 minutes before transferring to a wire rack to cool completely.
