Instructions
- Preheat the oven to 350°F and prepare an 8x8 baking pan with cooking spray.
- In a large bowl, mix the oats, spices, and salt together.
- In another bowl, combine the brown sugar, pumpkin, applesauce, honey, and vanilla extract until smooth, then pour over the oat mixture and stir until well combined.
- Press the mixture evenly into the prepared pan and bake for 30-35 minutes until golden brown.
- Allow to cool for 5 minutes, then cut into bars and let cool completely.
