Ingredients

The base

  • 3 cups old fashioned oats
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt

The sweeteners and binders

  • ¾ cup brown sugar
  • ½ cup pumpkin puree
  • ¼ cup applesauce
  • ¼ cup honey
  • 1 teaspoon vanilla extract

The mix-ins

  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 baking pan with cooking spray.
  2. In a large bowl, mix the oats, spices, and salt together.
  3. In another bowl, combine the brown sugar, pumpkin, applesauce, honey, and vanilla extract until smooth, then pour over the oat mixture and stir until well combined.
  4. Press the mixture evenly into the prepared pan and bake for 30-35 minutes until golden brown.
  5. Allow to cool for 5 minutes, then cut into bars and let cool completely.
