Instructions
- Line an 8×8 baking dish with parchment paper, leaving overhang for easy removal.
- In a large bowl, mix oats, almonds, ground flax seed, pepitas, dried cranberries, dried apricots, sea salt, and pumpkin spice.
- In a microwave-safe bowl, combine peanut butter and maple syrup, then microwave until smooth and runny.
- Add the peanut butter mixture to the dry ingredients and mix until everything is coated.
- Transfer the mixture to the lined baking dish and press down firmly.
- Refrigerate for 1 hour to solidify before cutting and serving.
