Ingredients

The base

  • cup regular oats
  • 1 cup whole almonds, roughly chopped
  • cup ground flax seed
  • cup pepitas
  • cup dried cranberries
  • 10 pieces dried apricots, finely sliced
  • ½ teaspoon sea salt
  • 1 teaspoon pumpkin spice

The binding mixture

  • 1 cup peanut butter
  • ½ cup maple syrup

Instructions

  1. Line an 8×8 baking dish with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, mix oats, almonds, ground flax seed, pepitas, dried cranberries, dried apricots, sea salt, and pumpkin spice.
  3. In a microwave-safe bowl, combine peanut butter and maple syrup, then microwave until smooth and runny.
  4. Add the peanut butter mixture to the dry ingredients and mix until everything is coated.
  5. Transfer the mixture to the lined baking dish and press down firmly.
  6. Refrigerate for 1 hour to solidify before cutting and serving.
