No-Bake Pumpkin Chocolate Chip Granola Bars

Instructions
- Combine the oats, pumpkin puree, nut or seed butter, maple syrup, pumpkin pie spice, and vanilla extract in a food processor or blender and mix until well combined.
- Transfer the mixture to a bowl and fold in the chopped pecans and chocolate chips.
- Line a 9 x 5 inch loaf pan with plastic wrap or parchment paper.
- Spread the mixture into the loaf pan and press down firmly.
- Place the pan in the freezer for 30 minutes before slicing into bars.
