Ingredients

The base

  • 2 cups gluten-free rolled oats
  • 1/3 cup pumpkin puree
  • 1/4 cup nut or seed butter of choice
  • 3 Tbsp. pure maple syrup
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. pure vanilla extract

Add-ins

  • 1/4 cup chopped pecans
  • 1/4 cup mini-chocolate chips

Instructions

  1. Combine the oats, pumpkin puree, nut or seed butter, maple syrup, pumpkin pie spice, and vanilla extract in a food processor or blender and mix until well combined.
  2. Transfer the mixture to a bowl and fold in the chopped pecans and chocolate chips.
  3. Line a 9 x 5 inch loaf pan with plastic wrap or parchment paper.
  4. Spread the mixture into the loaf pan and press down firmly.
  5. Place the pan in the freezer for 30 minutes before slicing into bars.
