Instructions
- Prepare a 9x9 or 8x8 brownie pan with parchment paper and baking spray.
- Chop the walnuts.
- In a medium pot, combine all cranberry filling ingredients and boil until thickened.
- Preheat the oven to 350°F and position the rack in the lower third.
- Process the shredded coconut until finely ground, then combine with the dry ingredients for the shortbread crust.
- Melt the butter and mix it with the dry ingredients until crumbly, reserving ¾ cup for topping.
- Press the shortbread mixture firmly into the bottom of the prepared pan.
- Spread the cooled cranberry filling over the crust evenly.
- Sprinkle the reserved crumb mixture, walnuts, brown sugar, and chocolate chips on top.
- Bake for 30 minutes or until golden brown, then cool completely before cutting into bars.
