Ingredients

The base

  • 1 Tbsp cooking oil
  • 1 tsp adobo
  • 1 packet sazón
  • ¼ cup diced yellow onion
  • 1 Tbsp minced garlic
  • ¼ cup sofrito
  • 2 Tbsp tomato sauce

The protein and flavorings

  • 2 Tbsp pimiento stuffed Spanish olives
  • 2 tsp capers
  • 2 5oz. cans Vienna sausages

The rice

  • 2 cups long-grain white rice
  • cups boiling chicken broth
  • ¼ cup chopped cilantro leaves for garnish

Instructions

  1. Heat cooking oil in a large pot over medium-high heat.
  2. Add adobo and sazón, cooking until fragrant.
  3. Add diced onion and cook until translucent.
  4. Stir in minced garlic and cook until fragrant.
  5. Add sofrito, tomato sauce, olives, and capers, cooking until fragrant.
  6. Slice Vienna sausages and rinse the rice until clear.
  7. Add sausages to the pot and sauté until browned.
  8. Stir in rinsed rice and boiling chicken broth, bringing to a hard boil.
  9. Reduce heat to low, cover, and simmer until rice is tender.
  10. Remove from heat and let rest, covered, for 10 minutes.
  11. Uncover, stir, and adjust seasoning as needed.
  12. Stir in cilantro and serve.
