Instructions
- Heat cooking oil in a large pot over medium-high heat.
- Add adobo and sazón, cooking until fragrant.
- Add diced onion and cook until translucent.
- Stir in minced garlic and cook until fragrant.
- Add sofrito, tomato sauce, olives, and capers, cooking until fragrant.
- Slice Vienna sausages and rinse the rice until clear.
- Add sausages to the pot and sauté until browned.
- Stir in rinsed rice and boiling chicken broth, bringing to a hard boil.
- Reduce heat to low, cover, and simmer until rice is tender.
- Remove from heat and let rest, covered, for 10 minutes.
- Uncover, stir, and adjust seasoning as needed.
- Stir in cilantro and serve.
