Epic Whole30 Creamy Garlic Chicken

Instructions
- Slice the chicken breasts in half to create cutlets and season with salt and pepper.
- Heat a skillet over medium-high heat, add ghee, and sear the chicken for 4-5 minutes on each side, then remove from the pan.
- Lower the heat and add remaining ghee and whole garlic cloves to the pan, sautéing for 3-4 minutes until browned.
- Add diced onion to the pan and sauté until translucent, about 1-2 minutes.
- Pour in chicken broth, lemon juice, and thyme, stirring to combine and simmer until reduced by half.
- Slowly add coconut milk, stirring until combined, and season with salt to taste.
- Return the chicken to the pan and simmer for an additional 5 minutes.
- Garnish with chopped parsley or basil and serve.
