Ginger Beer Concentrate

agave nectar, honey or pure cane sugar

Instructions
- Blend the ginger with 1 cup of water for 3 minutes and strain the juice.
- Repeat the blending and straining process two more times with additional water.
- Combine the strained liquid with lime juice and sweetener in the blender and blend for 30 seconds.
- Taste the concentrate and adjust sweetness if necessary.
- Refrigerate the concentrate for up to 3 weeks and shake before serving.
- Serve with club soda and garnish with lime or mint if desired.
