Ingredients

The cake

  • 1 lb carrots
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 4 large eggs
  • 1 1/4 cups vegetable or grapeseed oil

The frosting

  • 8 oz cream cheese
  • 1/2 cup sugar
  • 2/3 cup heavy cream
  • 1 pinch sea salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F and prepare the cake pan.
  2. Shred the carrots using a food processor or box grater.
  3. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and sugars.
  4. Add the shredded carrots to the dry ingredients and toss to coat.
  5. Add the beaten eggs and oil to the mixture and stir until smooth.
  6. Transfer the batter to the prepared pan and bake until a toothpick comes out clean.
  7. Let the cake cool completely before frosting.
  8. For the frosting, beat the cream cheese and sugar until light and fluffy.
