Adzuki Bean Bowls

Ingredients

The bowl components

  • ½ large Napa cabbage head
  • 3 small carrots
  • 1 cup sugar snap peas
  • 2 tablespoons sesame seeds
  • 1 cup cooked brown rice
  • 2 tablespoons chopped fresh cilantro leaves
  • cups cooked adzuki beans
  • 2 avocados
  • 1 small fresh red chile

Sesame Miso Dressing

  • ¼ cup white miso
  • cup rice vinegar
  • ¼ cup olive oil
  • 3 tablespoons tamari
  • 1 tablespoon toasted sesame oil

Instructions

  1. Prepare the dressing by whisking together miso, rice vinegar, olive oil, tamari, and sesame oil.
  2. In a large bowl, combine the cabbage, carrots, snap peas, and sesame seeds with a portion of the dressing.
  3. Just before serving, fold in the cilantro into the cabbage salad.
  4. Divide the rice, cabbage salad, beans, and avocado among four bowls.
  5. Drizzle with additional dressing and top with sliced chile, cilantro, and sesame seeds as desired.
