Ingredients

The Chicken Shawarma

  • 1.5 lbs. boneless skinless chicken breast
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cinnamon
  • ½ teaspoon cardamom
  • ¼ teaspoon black pepper
  • ¼ teaspoon sea salt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil

The Garlic Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic
  • 1 teaspoon cumin
  • to taste salt & pepper

The Bowls

  • 2 cups cooked quinoa
  • 1 cup diced cucumber
  • 1 medium zucchini
  • 1 cup sliced cherry tomatoes
  • 2 cups sliced romaine lettuce

Instructions

  1. Combine the marinade ingredients in a bowl and mix well.
  2. Place the chicken in a ziplock bag, pour the marinade over it, seal, and refrigerate overnight.
  3. Mix the sauce ingredients in a separate bowl until well combined.
  4. Preheat the grill to medium-high heat and prepare the grill grates.
  5. Grill the marinated chicken and zucchini until cooked through.
  6. Let the chicken rest before slicing it.
  7. Assemble the bowls by adding quinoa, lettuce, zucchini, tomatoes, cucumber, and sliced chicken.
  8. Top with garlic yogurt sauce and serve.
