Instructions
- Combine the salt, pepper, paprika, Italian seasoning, and garlic powder in a bowl and mix well.
- Rub the seasoning mixture over both sides of the chicken thighs.
- Set the Instant Pot to sauté mode and add the olive oil.
- Place the chicken thighs in the pot in a single layer and brown for 4 minutes on each side.
- Once browned, arrange the chicken skin side up in the pot.
- Pour the chicken broth into the pot, seal it, and cook on manual high pressure for 10 minutes.
- Allow the pressure to release naturally after cooking.
- Remove the chicken from the pot and keep warm.
- Switch the Instant Pot back to sauté mode and bring the liquid to a simmer.
- Whisk the corn starch with 2 tablespoons of cold water and stir it into the pot liquid.
- Cook until the gravy thickens, then add the butter and stir until melted.
- Serve the chicken topped with gravy and sprinkle with parsley.
