Ingredients

The chicken and seasoning

  • 1 ¼ teaspoons kosher salt
  • ½ teaspoon pepper
  • ¾ teaspoon paprika
  • ¾ teaspoon Italian seasoning
  • ¾ teaspoon garlic powder
  • 6 pieces chicken thighs (bone-in, skin-on)

The cooking ingredients

  • 1 ½ tablespoons olive oil
  • 1 cup chicken broth
  • 1 ½ tablespoons corn starch
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Combine the salt, pepper, paprika, Italian seasoning, and garlic powder in a bowl and mix well.
  2. Rub the seasoning mixture over both sides of the chicken thighs.
  3. Set the Instant Pot to sauté mode and add the olive oil.
  4. Place the chicken thighs in the pot in a single layer and brown for 4 minutes on each side.
  5. Once browned, arrange the chicken skin side up in the pot.
  6. Pour the chicken broth into the pot, seal it, and cook on manual high pressure for 10 minutes.
  7. Allow the pressure to release naturally after cooking.
  8. Remove the chicken from the pot and keep warm.
  9. Switch the Instant Pot back to sauté mode and bring the liquid to a simmer.
  10. Whisk the corn starch with 2 tablespoons of cold water and stir it into the pot liquid.
  11. Cook until the gravy thickens, then add the butter and stir until melted.
  12. Serve the chicken topped with gravy and sprinkle with parsley.
